Sticky toffee overnight oats
Ingredients
- 100g oats
- 2 tbsp ground flaxseed
- 1 tsp cinnamon
- ½ tsp ground nutmeg
- 2 tbsp maple syrup
- 250ml plant milk
- 40g pecans
- 4 dates, pitted
- 50ml plant milk
- ¼ tsp vanilla
Steps
- Add the oats, flaxseed, cinnamon, nutmeg, maple syrup and milk to a bowl and mix. Divide into 2 jars then set aside.
- Add the dates to a bowl and cover with warm water. Leave to soak for 10 minutes, until sticky.
- Blend the dates, milk, vanilla and a pinch of salt until smooth.
- Divide the sauce between the two jars, spreading over in an even layer. Refrigerate overnight.
- When ready to serve, top with the pecans and a pinch of sea salt.
