Crispy rice omelette
Ingredients
- 1 tbsp chilli oil
- 1 cup day old cooked rice
- 3-4 eggs
- Furikake
- 4 spring onions, sliced
- ½ cup cheese
Steps
- Crack 2-3 eggs in a bowl. Stir in a pinch of salt & pepper; and whisk well until frothy.
- Heat the chilli oil. Add the rice and mix well until combined. Spread over the pan in a thin even layer gently pressing down.
- Cook for a few minutes so the bottom starts to crisp.
- Pour in the eggs. Use your spatula to spread evenly over the rice. Sprinkle the furikake, spring onions and cheese evenly over the egg.
- Cover the pan with a lid and let it cook for 3-5 minutes or until the eggs are cooked through.
- Slide your spatula along the edges to make sure the rice is not sticking, then lift and tilt the pan and slide the omelette onto a plate.
