Crispy rice omelette

Ingredients

  • 1 tbsp chilli oil
  • 1 cup day old cooked rice
  • 3-4 eggs
  • Furikake
  • 4 spring onions, sliced
  • ½ cup cheese

Steps

  1. Crack 2-3 eggs in a bowl. Stir in a pinch of salt & pepper; and whisk well until frothy.
  2. Heat the chilli oil. Add the rice and mix well until combined. Spread over the pan in a thin even layer gently pressing down.
  3. Cook for a few minutes so the bottom starts to crisp.
  4. Pour in the eggs. Use your spatula to spread evenly over the rice. Sprinkle the furikake, spring onions and cheese evenly over the egg.
  5. Cover the pan with a lid and let it cook for 3-5 minutes or until the eggs are cooked through.
  6. Slide your spatula along the edges to make sure the rice is not sticking, then lift and tilt the pan and slide the omelette onto a plate.
