Kimchi Tofu Stew
Ingredients
- ½ onion, chopped
- 1 tbsp minced garlic
- 2 spring onions, chopped
- 1 tbsp gochugaru
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 tsp sugar
- 2 cups dashi
- 1 serving noodles
- 3 tbsp kimchi, chopped
- 1 pack silken tofu
Steps
- Heat a pot over medium-high heat and add a drizzle of oil. Once hot, add the onion and spring onion whites. Sauté until onion is translucent.
- Stir in the Korean red chilli flakes, soy sauce, sugar, sesame oil, garlic and kimchi. Mix well to combine and cook until fragrant.
- Add dashi and bring to a gentle simmer.
- Add the noodles and tofu to the broth and cook until noodles are done. Garnish with spring onion greens.
