Ingredients

  • ½ onion, chopped
  • 1 tbsp minced garlic
  • 2 spring onions, chopped
  • 1 tbsp gochugaru
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp sugar
  • 2 cups dashi
  • 1 serving noodles
  • 3 tbsp kimchi, chopped
  • 1 pack silken tofu

Steps

  1. Heat a pot over medium-high heat and add a drizzle of oil. Once hot, add the onion and spring onion whites. Sauté until onion is translucent.
  2. Stir in the Korean red chilli flakes, soy sauce, sugar, sesame oil, garlic and kimchi. Mix well to combine and cook until fragrant.
  3. Add dashi and bring to a gentle simmer.
  4. Add the noodles and tofu to the broth and cook until noodles are done. Garnish with spring onion greens.
