Pak choi with egg
Ingredients
- 500g pak choi
- 4 eggs, beaten
- 1 red chilli, finely chopped
- 4 cloves garlic, minced
- 1 inch ginger, minced
- ½ tsp salt
- 3 tsp light soy sauce
- 1 tsp vegan oyster sauce
- ½ tsp white pepper
- 1 tsp fermented black beans
Steps
- Clean the pak choi. Cut into 1cm pieces and separate the leaves and stems.
- Heat oil in the wok, once hot add eggs and scramble. Once cooked remove from the wok and set aside.
- Heat a little more oil. Add the chilli, garlic and ginger. Cook until fragrant.
- Add the pak choi stems. Stir fry over medium heat until softened. Then add the eggs back to the wok.
- Add salt, soy sauce, oyster sauce, white pepper, black beans and pak choi leaves. Toss to coat and remove from heat.
