  • 500g pak choi
  • 4 eggs, beaten
  • 1 red chilli, finely chopped
  • 4 cloves garlic, minced
  • 1 inch ginger, minced
  • ½ tsp salt
  • 3 tsp light soy sauce
  • 1 tsp vegan oyster sauce
  • ½ tsp white pepper
  • 1 tsp fermented black beans

Steps

  1. Clean the pak choi. Cut into 1cm pieces and separate the leaves and stems.
  2. Heat oil in the wok, once hot add eggs and scramble. Once cooked remove from the wok and set aside.
  3. Heat a little more oil. Add the chilli, garlic and ginger. Cook until fragrant.
  4. Add the pak choi stems. Stir fry over medium heat until softened. Then add the eggs back to the wok.
  5. Add salt, soy sauce, oyster sauce, white pepper, black beans and pak choi leaves. Toss to coat and remove from heat.
