Ingredients

  • 1 cup long-grain rice
  • 6 cups water
  • 1 cinnamon stick
  • 2 cloves, whole
  • ½ tsp vanilla extract
  • 450g strawberries, hulled
  • ½ cup cane sugar
  • ¾ cup condensed milk
  • fresh strawberry slices

Steps

  1. Rinse and strain uncooked rice. Soak in 6 cups water for 2 to 4 hours.
  2. Place rice and water in blender with cinnamon stick broken in half and cloves and blend until well blended.
  3. Strain through a sieve and discard solids.
  4. Return liquid to the blender with vanilla, strawberries, and sugar and blend until smooth, strain.
  5. Taste and add more water or sugar to your liking or sweetened condensed milk if you want a creamy strawberry horchata.
  6. Garnish with fresh strawberries and pour into glasses filled with ice.
