Strawberry horchata
Ingredients
- 1 cup long-grain rice
- 6 cups water
- 1 cinnamon stick
- 2 cloves, whole
- ½ tsp vanilla extract
- 450g strawberries, hulled
- ½ cup cane sugar
- ¾ cup condensed milk
- fresh strawberry slices
Steps
- Rinse and strain uncooked rice. Soak in 6 cups water for 2 to 4 hours.
- Place rice and water in blender with cinnamon stick broken in half and cloves and blend until well blended.
- Strain through a sieve and discard solids.
- Return liquid to the blender with vanilla, strawberries, and sugar and blend until smooth, strain.
- Taste and add more water or sugar to your liking or sweetened condensed milk if you want a creamy strawberry horchata.
- Garnish with fresh strawberries and pour into glasses filled with ice.
