Ingredients

  • 1 tbsp olive oil
  • 1 onion, roughly chopped
  • 4 garlic cloves
  • 1 tsp salt
  • ½ tsp pepper
  • ½ tsp oregano
  • ½ tsp cumin
  • 1 tbsp chipotle paste
  • 1 can fire-roasted tomatoes
  • 1 can jackfruit, drained
  • ½ white onion, diced
  • 2 tbsp minced coriander
  • 1 lime
  • ½ diced avocado
  • Pinch kosher salt
  • Tortillas, warmed
  • Vegan feta

Steps

  1. In a pot on medium heat, add the oil. Once warm, add the onion and a pinch of salt. Cook until translucent.
  2. Add the garlic and cook until fragrant the turn off the heat. Add the salt, pepper, oregano, cumin, chipotle paste and tomatoes.
  3. Using the stick blender, whizz until smooth.
  4. Chop up and shred the jackfruit. Rinse it with cold water and then give it a shake to get rid of any excess water.
  5. Transfer the jackfruit to the pot with the tinga sauce and bring to a gentle simmer. Turn heat to low and cook for 15-20 minutes.
  6. Meanwhile in a medium bowl mix together the onion, coriander, lime juice, avocado and a few pinches of salt.
  7. Add a spoonful of tinga to the centre of a warm tortilla. Top with the onion mixture and a tablespoon of vegan feta.
