Jackfruit tinga tacos
Ingredients
- 1 tbsp olive oil
- 1 onion, roughly chopped
- 4 garlic cloves
- 1 tsp salt
- ½ tsp pepper
- ½ tsp oregano
- ½ tsp cumin
- 1 tbsp chipotle paste
- 1 can fire-roasted tomatoes
- 1 can jackfruit, drained
- ½ white onion, diced
- 2 tbsp minced coriander
- 1 lime
- ½ diced avocado
- Pinch kosher salt
- Tortillas, warmed
- Vegan feta
Steps
- In a pot on medium heat, add the oil. Once warm, add the onion and a pinch of salt. Cook until translucent.
- Add the garlic and cook until fragrant the turn off the heat. Add the salt, pepper, oregano, cumin, chipotle paste and tomatoes.
- Using the stick blender, whizz until smooth.
- Chop up and shred the jackfruit. Rinse it with cold water and then give it a shake to get rid of any excess water.
- Transfer the jackfruit to the pot with the tinga sauce and bring to a gentle simmer. Turn heat to low and cook for 15-20 minutes.
- Meanwhile in a medium bowl mix together the onion, coriander, lime juice, avocado and a few pinches of salt.
- Add a spoonful of tinga to the centre of a warm tortilla. Top with the onion mixture and a tablespoon of vegan feta.
