Ingredients

  • 1 block tofu
  • 1 tbsp dark soy sauce
  • ½ tbsp light soy sauce
  • ½ tbsp fennel seeds
  • ½ tbsp thyme
  • ½ tbsp oregano
  • 1 tsp smoked paprika
  • 1 tsp msg
  • 2 tbsp olive oil
  • 2 shallots, finely chopped
  • 4 cloves garlic, sliced
  • 1 red pepper, diced
  • 1 green pepper, diced
  • 1 courgette, sliced
  • 7-8 fresh basil leaves
  • 1 tsp red chilli flakes
  • ½ cup coconut cream
  • ⅓ cup pasta water
  • 1 tsp black pepper
  • Pasta

Steps

  1. Drain and press the tofu. Once done crumble into a bowl. Add ingredients from soy sauce to msg and mix well to coat.
  2. Heat olive oil in a pan on low, once hot add the tofu. Cook until browned then remove from the pan and set aside.
  3. Meanwhile, cook the pasta in salted water according to package instructions. Reserve a cup of pasta cooking water once done.
  4. In the same pan that had the tofu heat a little more oil. Add the shallots and cook until translucent.
  5. Add the garlic and bell pepper and cook until bell pepper for a few minutes then add the courgette.
  6. Once bell peppers is cooked add the chilli flakes and fresh basil, mix.
  7. Add the cream, pasta, pasta water and tofu. Season with salt and pepper and mix well. Serve.
