Tofu sausage pasta
Ingredients
- 1 block tofu
- 1 tbsp dark soy sauce
- ½ tbsp light soy sauce
- ½ tbsp fennel seeds
- ½ tbsp thyme
- ½ tbsp oregano
- 1 tsp smoked paprika
- 1 tsp msg
- 2 tbsp olive oil
- 2 shallots, finely chopped
- 4 cloves garlic, sliced
- 1 red pepper, diced
- 1 green pepper, diced
- 1 courgette, sliced
- 7-8 fresh basil leaves
- 1 tsp red chilli flakes
- ½ cup coconut cream
- ⅓ cup pasta water
- 1 tsp black pepper
- Pasta
Steps
- Drain and press the tofu. Once done crumble into a bowl. Add ingredients from soy sauce to msg and mix well to coat.
- Heat olive oil in a pan on low, once hot add the tofu. Cook until browned then remove from the pan and set aside.
- Meanwhile, cook the pasta in salted water according to package instructions. Reserve a cup of pasta cooking water once done.
- In the same pan that had the tofu heat a little more oil. Add the shallots and cook until translucent.
- Add the garlic and bell pepper and cook until bell pepper for a few minutes then add the courgette.
- Once bell peppers is cooked add the chilli flakes and fresh basil, mix.
- Add the cream, pasta, pasta water and tofu. Season with salt and pepper and mix well. Serve.
