Miso lemon pasta
Ingredients
- Pasta
- 3 tbsp olive oil
- 1 red onion, finely chopped
- 6 cloves garlic, sliced
- 1 ½ cup soy milk
- Zest of 1 lemon
- 4 tbsp nooch
- 1 ½ tbsp white miso paste
- ½ tbsp black pepper
- 3 tbsp lemon juice
- ½ cup pasta water
- ½ cup chopped parsley
Steps
- Cook pasta in salted boiling water according to package instructions, reserve 250ml of pasta water.
- Heat olive oil in a pan. Once hot add the onion and a dash of salt, cook until translucent.
- Add the garlic and cook until fragrant. Add the soy milk, lemon zest, nooch, miso and pepper.
- Mix until combined then bring to a simmer. Add the pasta, pasta water and lemon juice and cook until thickened.
- Add the parsley and season to taste.
