Ingredients

  • Pasta
  • 3 tbsp olive oil
  • 1 red onion, finely chopped
  • 6 cloves garlic, sliced
  • 1 ½ cup soy milk
  • Zest of 1 lemon
  • 4 tbsp nooch
  • 1 ½ tbsp white miso paste
  • ½ tbsp black pepper
  • 3 tbsp lemon juice
  • ½ cup pasta water
  • ½ cup chopped parsley

Steps

  1. Cook pasta in salted boiling water according to package instructions, reserve 250ml of pasta water.
  2. Heat olive oil in a pan. Once hot add the onion and a dash of salt, cook until translucent.
  3. Add the garlic and cook until fragrant. Add the soy milk, lemon zest, nooch, miso and pepper.
  4. Mix until combined then bring to a simmer. Add the pasta, pasta water and lemon juice and cook until thickened.
  5. Add the parsley and season to taste.
