Garlic butter macaroni
Ingredients
- 1 tbsp olive oil
- 4 tbsp butter
- 1 onion, diced
- 5 garlic cloves, minced
- 320g pasta
- 4 cups vegan chicken stock
- 1 tbsp miso
- 1 tsp italian seasoning
- ½ tsp salt
- ½ cup parmesan cheese
- ½ tsp black pepper
- ½ tsp red chilli flakes
Steps
- Heat olive oil and butter over medium heat. Once hot add the onion and garlic and cook until onion is translucent.
- Add the uncooked pasta and sauté it in the oil for 2-3 mins until the pasta becomes a little toasty.
- Pour in the stock, mix in the miso and season with salt and italian seasoning. Cook until al dente.
- Turn off the heat, add butter and parmesan cheese and stir to combine.
- Season with black pepper and red chilli flakes.
