Ingredients

  • 1 tbsp olive oil
  • 4 tbsp butter
  • 1 onion, diced
  • 5 garlic cloves, minced
  • 320g pasta
  • 4 cups vegan chicken stock
  • 1 tbsp miso
  • 1 tsp italian seasoning
  • ½ tsp salt
  • ½ cup parmesan cheese
  • ½ tsp black pepper
  • ½ tsp red chilli flakes

Steps

  1. Heat olive oil and butter over medium heat. Once hot add the onion and garlic and cook until onion is translucent.
  2. Add the uncooked pasta and sauté it in the oil for 2-3 mins until the pasta becomes a little toasty.
  3. Pour in the stock, mix in the miso and season with salt and italian seasoning. Cook until al dente.
  4. Turn off the heat, add butter and parmesan cheese and stir to combine.
  5. Season with black pepper and red chilli flakes.
