Turkish pasta
Ingredients
- 2 tbsp neutral oil
- 1 red onion, finely chopped
- 2 cups grated tofu
- 3 tbsp dark soy sauce
- 1 tbsp ketchup
- 1 tbsp vegan beef stock powder
- 1 tsp smoked paprika
- 1 tsp cumin
- 1 tsp chilli flakes
- 1 tsp garlic powder
- Pasta
- 1 cup unsweetened vegan yogurt
- 1 garlic clove, minced
- 1 tsp lemon juice
- 1 tsp olive oil
- Salt to taste
- 4 tbsp vegan butter
- ½ tsp smoked paprika
- ¼ tsp red pepper flakes
- ½ tsp salt
- Chopped tomato
- Chopped parsley
Steps
- Heat oil in a pan over medium heat. Once hot add the red onion and a dash of salt, cook until translucent.
- Add the tofu, soy sauce, ketchup, stock powder, smoked paprika, cumin, chilli flakes and garlic powder. Cook low and slow until browned.
- Meanwhile cook pasta according to package instructions.
- In a bowl mix the yogurt, minced garlic, lemon juice and olive oil and season with salt.
- Heat a small pan then add the butter. Once melted add the smoked paprika, red pepper flakes and salt. Stir and cook until butter is melted and bubbly.
- To assemble add pasta to bowls, top with yogurt sauce, tofu mixture and paprika butter. Garnish with parsley and tomatoes.
