Ingredients

  • 2 tbsp neutral oil
  • 1 red onion, finely chopped
  • 2 cups grated tofu
  • 3 tbsp dark soy sauce
  • 1 tbsp ketchup
  • 1 tbsp vegan beef stock powder
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp chilli flakes
  • 1 tsp garlic powder
  • Pasta
  • 1 cup unsweetened vegan yogurt
  • 1 garlic clove, minced
  • 1 tsp lemon juice
  • 1 tsp olive oil
  • Salt to taste
  • 4 tbsp vegan butter
  • ½ tsp smoked paprika
  • ¼ tsp red pepper flakes
  • ½ tsp salt
  • Chopped tomato
  • Chopped parsley

Steps

  1. Heat oil in a pan over medium heat. Once hot add the red onion and a dash of salt, cook until translucent.
  2. Add the tofu, soy sauce, ketchup, stock powder, smoked paprika, cumin, chilli flakes and garlic powder. Cook low and slow until browned.
  3. Meanwhile cook pasta according to package instructions.
  4. In a bowl mix the yogurt, minced garlic, lemon juice and olive oil and season with salt.
  5. Heat a small pan then add the butter. Once melted add the smoked paprika, red pepper flakes and salt. Stir and cook until butter is melted and bubbly.
  6. To assemble add pasta to bowls, top with yogurt sauce, tofu mixture and paprika butter. Garnish with parsley and tomatoes.
