Burnt courgette & whipped tofu
Ingredients
- 3 tbsp olive oil
- Pinch of salt
- 4-5 courgettes
- 2 tbsp oregano
- 1 block silken tofu
- 1 lemon, zest & juice
- 2 garlic cloves, minced
- 3 tbsp nooch
- 1 tbsp miso paste
- Pinch sea salt
- 6 tbsp chives, finely chopped
- Toasted croissants
Steps
- Brush the courgettes with oil and season with salt and pepper. Place them over the grill and allow them to cook slowly, turning occasionally.
- Meanwhile in a large bowl combine the tofu, lemon zest and juice, garlic, nooch, miso and salt. Whisk until smooth and creamy.
- Just before the courgettes are charred all over, sprinkle with oregano.
- Slice the toasted croissants in half and spread a thick layer of tofu over them and a sprinkle of chives.
- Arrange the charred courgettes on top, then drizzle over some extra olive oil to serve.
