Ingredients

  • 3 tbsp olive oil
  • Pinch of salt
  • 4-5 courgettes
  • 2 tbsp oregano
  • 1 block silken tofu
  • 1 lemon, zest & juice
  • 2 garlic cloves, minced
  • 3 tbsp nooch
  • 1 tbsp miso paste
  • Pinch sea salt
  • 6 tbsp chives, finely chopped
  • Toasted croissants

Steps

  1. Brush the courgettes with oil and season with salt and pepper. Place them over the grill and allow them to cook slowly, turning occasionally.
  2. Meanwhile in a large bowl combine the tofu, lemon zest and juice, garlic, nooch, miso and salt. Whisk until smooth and creamy.
  3. Just before the courgettes are charred all over, sprinkle with oregano.
  4. Slice the toasted croissants in half and spread a thick layer of tofu over them and a sprinkle of chives.
  5. Arrange the charred courgettes on top, then drizzle over some extra olive oil to serve.
