Walnut taquitos
Ingredients
- 1 red onion, thinly sliced
- Juice of 1 ½ limes
- 4 garlic cloves
- 1 large red onion
- 1 tsp smoked paprika
- 1 tsp cayenne pepper
- 1 tsp oregano
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tbsp tomato paste
- 1 cup walnuts
- 2-3 carrots, grated
- 1 can black beans
- 1 ½ cup veg stock
- Corn tortillas
- 1 cup grated cheese
- Salt & pepper
- ½ cup soaked cashews
- ¼ cup vegetable stock
- ½ roasted garlic bulb
- 4 tbsp nutritional yeast
- Pinch of turmeric
- Salt n pepper

Steps
- Place red onion in a bowl with lime juice, seal and refrigerate for at least 4 hours.
- Fry off the onion and garlic until slightly browned then add the spices and tomato paste. Cook for a few minutes until spices start to toast.
- Blend the walnuts until smaller but still chunky. Add to the pan along with the carrot and beans. Slowly add the stock and cook until thickened.
- Warm the tortillas in the microwave until pliable.
- Let the mixture cool slightly then spoon a few tablespoons into a line on a tortillas. Sprinkle with cheese and tightly roll. Repeat. Air fry until crispy.
- Blend the soaked cashews, garlic and stock. Mix in the nooch, turmeric and season with salt and pepper.
