Ingredients

  • 1 red onion, thinly sliced
  • Juice of 1 ½ limes
  • 4 garlic cloves
  • 1 large red onion
  • 1 tsp smoked paprika
  • 1 tsp cayenne pepper
  • 1 tsp oregano
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp tomato paste
  • 1 cup walnuts
  • 2-3 carrots, grated
  • 1 can black beans
  • 1 ½ cup veg stock
  • Corn tortillas
  • 1 cup grated cheese
  • Salt & pepper
  • ½ cup soaked cashews
  • ¼ cup vegetable stock
  • ½ roasted garlic bulb
  • 4 tbsp nutritional yeast
  • Pinch of turmeric
  • Salt n pepper
  • coriander

Steps

  1. Place red onion in a bowl with lime juice, seal and refrigerate for at least 4 hours.
  2. Fry off the onion and garlic until slightly browned then add the spices and tomato paste. Cook for a few minutes until spices start to toast.
  3. Blend the walnuts until smaller but still chunky. Add to the pan along with the carrot and beans. Slowly add the stock and cook until thickened.
  4. Warm the tortillas in the microwave until pliable.
  5. Let the mixture cool slightly then spoon a few tablespoons into a line on a tortillas. Sprinkle with cheese and tightly roll. Repeat. Air fry until crispy.
  6. Blend the soaked cashews, garlic and stock. Mix in the nooch, turmeric and season with salt and pepper.
