  • 5 onions, sliced
  • 1 head garlic, top sliced off
  • ½ cup sun dried tomatoes, chopped
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp paprika
  • 1 tsp dried parsley
  • ½ cup coconut milk
  • 3 cups farfalle, cooked
  • 1 handful parsley, chopped
  • 1 handful basil, chopped
  • 1 lemon, juiced

Steps

  1. Preheat the oven to 200°C.
  2. In a casserole dish add the onion, sun-dried tomatoes, paprika, salt, pepper and parsley.
  3. Toss, and then place the whole garlic head in the middle. Drizzle with olive oil and cover with foil.
  4. Pop in the oven for 1 hour, tossing halfway through. If the onion is not yet caramelized cook a little longer.
  5. About 20 minutes before the casserole dish is done, prepare the pasta according to package directions, reserve a cup of pasta water.
  6. Remove the garlic from the casserole dish, and when safe to handle, squeeze out the cloves.
  7. Add the parsley, basil, lemon juice coconut milk, pasta and pasta water as needed. Mix to combine.
