Ingredients

  • 500g tofu
  • 4 tbsp vegan yogurt
  • 2 tbsp chickpea flour
  • 1 tbsp chilli powder
  • 1 tbsp coriander
  • ½ tbsp cumin
  • ½ tbsp garlic powder
  • ½ tbsp onion powder
  • 1 tsp fenugreek
  • 1 tsp turmeric
  • ½ tbsp sunflower oil
  • 1 red onion, thinly sliced
  • ½ cup apple cider vinegar
  • 1 tbsp brown sugar
  • 1 ½ tsp salt
  • 1 cup hot or warm water
  • Salt to taste
  • ½ cup coconut yogurt
  • 3 tbsp lemon juice
  • 1 bunch coriander
  • 1 cup mint leaves
  • 1 medium jalapeno, sliced
  • 2 tsp sliced ginger
  • 1 garlic clove
  • ¼ tsp salt
  • ½ tsp sugar
  • 1 red onion
  • Bread

Steps

  1. Drain and press the tofu. In a large bowl mix ingredients from yogurt to oil.
  2. Meanwhile add the red onion, vinegar, sugar and salt to a container and mix well.
  3. Add warm water until onions are fully submerged. Refrigerate.
  4. Rip the tofu into chunks and add to the marinade. Marinate overnight.
  5. Skewer the tofu then place on an oiled griddle pan on medium-high heat. Cook until nicely charred on each side.
  6. Meanwhile blend ingredients from yogurt to sugar in a blender until relatively smooth. Taste and adjust seasonings.
  7. Once the tofu is done grill the bread in the griddle.
  8. Slather bread with chutney, add tofu, pickled onions and more chutney.
