Rice cooker corn rice
Ingredients
- 1 cup rice, rinsed
- 1 ½ cups vegetable stock
- 1 tbsp light soy sauce
- 1 tbsp shaoxing wine
- 1 tsp salt
- 1 cup corn
- 265g soft tofu,
- 2 tbsp vegan butter
- Pinch of pepper
- 2 spring onions, finely sliced
Steps
- Clean the rice until the water runs clear.
- Add the stock, soy sauce, shaoxing wine and salt and mix until combined.
- On top add the corn and tofu, stir slightly to break up the tofu.
- Cook the rice.
- Once rice is cooked add the butter and pepper and stir in until butter is melted.
- Top with spring onions.
