Ingredients

  • 1 cup rice, rinsed
  • 1 ½ cups vegetable stock
  • 1 tbsp light soy sauce
  • 1 tbsp shaoxing wine
  • 1 tsp salt
  • 1 cup corn
  • 265g soft tofu,
  • 2 tbsp vegan butter
  • Pinch of pepper
  • 2 spring onions, finely sliced

Steps

  1. Clean the rice until the water runs clear.
  2. Add the stock, soy sauce, shaoxing wine and salt and mix until combined.
  3. On top add the corn and tofu, stir slightly to break up the tofu.
  4. Cook the rice.
  5. Once rice is cooked add the butter and pepper and stir in until butter is melted.
  6. Top with spring onions.
