Tofu kebab flatbreads
Ingredients
- 500g tofu, crumbled
- 1 red onion, finely chopped
- 5 garlic cloves, grated
- 1 tbsp cumin
- 1 tbsp coriander
- 1 tsp paprika
- ½ tsp salt
- ½ tsp black pepper
- 3 tbsp tomato puree
- 65g flour
- 15g parsley, finely chopped
- 1 cup vegan yogurt
- Juice of ½ lemon
- 1 clove garlic, grated
- ½ tsp salt
- 1 tsp olive oil
- Flatbreads
- Fresh parsley, chopped
- Pomegranate seeds
Steps
- In a large bowl mix ingredients from tofu to parsley.
- Use your hand to mash everything up together until you have a mixture that holds when shaping.
- Shape into small, evenly sized cylinders in the palm of your hand.
- Cook the cylinders in the air fryer until golden brown on all sides.
- Meanwhile mix ingredients from yogurt to olive oil for the yogurt sauce.
- Serve kebabs on flatbread and garnish with parsley, pomegranate seeds & yogurt sauce.
