Ingredients

  • 1 packet sweet peppers
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 330g cherry tomatoes
  • 3 tbsp tomato paste
  • 2 ½ tsp italian herbs
  • ½ tsp chilli flakes
  • 280g orzo
  • 800ml vegetable stock
  • 2 tbsp olive oil
  • ½ cup vegan cream
  • 1 handful basil, chopped
  • 2 large handfuls spinach
  • ¼ cup vegan parmesan

Steps

  1. Preheat the oven to 200°C.
  2. Heat oil in a pan over medium heat. Add the peppers and cook until softened. Remove from pan and add to an oven proof dish.
  3. Add onion to the pan and cook until softened. Add garlic and cook until fragrant. Add to same dish as the peppers.
  4. Add ingredients from cherry tomatoes to olive oil to the dish and mix well.
  5. Cover with lid and place in the oven to bake for 30 minutes, stirring half-way through.
  6. Remove from the oven. Stir in the spinach until it wilts. Add the cream, parmesan and basil and season with salt and pepper.
