Creamy tomato orzo
Ingredients
- 1 packet sweet peppers
- 1 onion, diced
- 4 cloves garlic, minced
- 330g cherry tomatoes
- 3 tbsp tomato paste
- 2 ½ tsp italian herbs
- ½ tsp chilli flakes
- 280g orzo
- 800ml vegetable stock
- 2 tbsp olive oil
- ½ cup vegan cream
- 1 handful basil, chopped
- 2 large handfuls spinach
- ¼ cup vegan parmesan
Steps
- Preheat the oven to 200°C.
- Heat oil in a pan over medium heat. Add the peppers and cook until softened. Remove from pan and add to an oven proof dish.
- Add onion to the pan and cook until softened. Add garlic and cook until fragrant. Add to same dish as the peppers.
- Add ingredients from cherry tomatoes to olive oil to the dish and mix well.
- Cover with lid and place in the oven to bake for 30 minutes, stirring half-way through.
- Remove from the oven. Stir in the spinach until it wilts. Add the cream, parmesan and basil and season with salt and pepper.
