Ingredients

  • 4 courgettes, 1 inch slices
  • 10 cherry tomatoes
  • 2 onions, thinly sliced
  • 4 garlic cloves, minced
  • 2 tbsp tomato paste
  • 200g vegan yoghurt
  • 1 tbsp lime juice
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp of turmeric
  • Cayenne pepper
  • Pita bread

Steps

  1. Heat oil in the wok over medium heat. Fry the sliced onions until translucent.
  2. Add the turmeric and 3 cloves of minced garlic and cook until fragrant.
  3. Add the tomato paste, cherry tomatoes, salt, pepper, and cook covered until the tomatoes are roasted.
  4. Cover a frying pan with a thin layer of vegetable oil and cook courgette until browned on both sides.
  5. When removing from the pan, place them on a paper towel lined plate to absorb the excess oil.
  6. Mix yoghurt with a small amount of water. Add the lime juice, salt and one minced garlic and stir well.
  7. Layer yogurt on a plate then add courgette slices and top with tomato and onion mixture. Sprinkle with cayenne.
