Borani kadoo
Ingredients
- 4 courgettes, 1 inch slices
- 10 cherry tomatoes
- 2 onions, thinly sliced
- 4 garlic cloves, minced
- 2 tbsp tomato paste
- 200g vegan yoghurt
- 1 tbsp lime juice
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp of turmeric
- Cayenne pepper
- Pita bread
Steps
- Heat oil in the wok over medium heat. Fry the sliced onions until translucent.
- Add the turmeric and 3 cloves of minced garlic and cook until fragrant.
- Add the tomato paste, cherry tomatoes, salt, pepper, and cook covered until the tomatoes are roasted.
- Cover a frying pan with a thin layer of vegetable oil and cook courgette until browned on both sides.
- When removing from the pan, place them on a paper towel lined plate to absorb the excess oil.
- Mix yoghurt with a small amount of water. Add the lime juice, salt and one minced garlic and stir well.
- Layer yogurt on a plate then add courgette slices and top with tomato and onion mixture. Sprinkle with cayenne.
