  • 1 can young green jackfruit
  • ¼ tsp clove powder
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • 1 tsp paprika
  • 1 tsp curry powder
  • 1 tsp cumin
  • 1 tsp seasoning salt
  • 1 tsp black pepper
  • 2 tsp dry thyme
  • 1 ½ tbsp soy sauce
  • 1 onion, chopped
  • 6 cloves garlic, minced
  • 8 sprigs thyme
  • 2 bay leaves
  • 1 spring onion
  • ¼ cup red wine
  • 4 cups vegan beef stock
  • 2 carrots, chopped
  • 2 bell peppers, chopped
  • 1 ½ tbsp tomato paste
  • 2 tsp cornstarch
  • Rice or roti

Steps

  1. Mix spices and soy sauce with jackfruit. Marinate for at least an hour.
  2. Fry jackfruit in the pan over medium heat until evenly browned. Remove from pan and set aside.
  3. In the same pot fry onions until translucent. Add garlic, thyme, bay leaves and spring onion and cook until softened.
  4. Add red wine and cook until mostly evaporated. Add beef stock and let simmer for ten minutes. Blitz with a hand mixer
  5. Add in chopped carrot and cook until slightly softened. Add bell pepper.
  6. Mix in tomato paste and jackfruit. Add cornstarch slurry and cook until thickened.
  7. Season with salt and pepper.
