Red stew jackfruit
Ingredients
- 1 can young green jackfruit
- ¼ tsp clove powder
- ¼ tsp garlic powder
- ¼ tsp onion powder
- 1 tsp paprika
- 1 tsp curry powder
- 1 tsp cumin
- 1 tsp seasoning salt
- 1 tsp black pepper
- 2 tsp dry thyme
- 1 ½ tbsp soy sauce
- 1 onion, chopped
- 6 cloves garlic, minced
- 8 sprigs thyme
- 2 bay leaves
- 1 spring onion
- ¼ cup red wine
- 4 cups vegan beef stock
- 2 carrots, chopped
- 2 bell peppers, chopped
- 1 ½ tbsp tomato paste
- 2 tsp cornstarch
- Rice or roti
Steps
- Mix spices and soy sauce with jackfruit. Marinate for at least an hour.
- Fry jackfruit in the pan over medium heat until evenly browned. Remove from pan and set aside.
- In the same pot fry onions until translucent. Add garlic, thyme, bay leaves and spring onion and cook until softened.
- Add red wine and cook until mostly evaporated. Add beef stock and let simmer for ten minutes. Blitz with a hand mixer
- Add in chopped carrot and cook until slightly softened. Add bell pepper.
- Mix in tomato paste and jackfruit. Add cornstarch slurry and cook until thickened.
- Season with salt and pepper.
