Ingredients

  • 12 sausages
  • 1 lemon, zest and juice
  • 5g oregano, leaves only
  • 25g parsley, finely chopped
  • 2 shallots, thinly sliced
  • 1 bulb garlic, thinly sliced
  • 500g white beans, drained
  • 150g spinach
  • 60g croutons
  • 1 lemon
  • Chilli flakes
  • Chives

Steps

  1. Preheat the oven to 180°C.
  2. In a bowl add zest of half the lemon. Add the oregano and parsley and mix together.
  3. Add ¼ cup olive oil and squeeze in the lemon juice. Season with salt and pepper, mix and set aside.
  4. Add the sausages to a tray and drizzle with oil, toss to coat. Roast in the oven until golden and cooked through.
  5. Add olive oil to a frying pan with the shallots and garlic. Put on medium heat and cook until lightly golden.
  6. Add the beans and spinach, cook until wilted. Remove from heat. Season with salt, pepper and lemon juice.
  7. Serve the beans into bowls, top with the sausages, some salmoriglio, crushed croutons and chilli flakes.
