Garlicky beans and sausages
Ingredients
- 12 sausages
- 1 lemon, zest and juice
- 5g oregano, leaves only
- 25g parsley, finely chopped
- 2 shallots, thinly sliced
- 1 bulb garlic, thinly sliced
- 500g white beans, drained
- 150g spinach
- 60g croutons
- 1 lemon
- Chilli flakes
- Chives
Steps
- Preheat the oven to 180°C.
- In a bowl add zest of half the lemon. Add the oregano and parsley and mix together.
- Add ¼ cup olive oil and squeeze in the lemon juice. Season with salt and pepper, mix and set aside.
- Add the sausages to a tray and drizzle with oil, toss to coat. Roast in the oven until golden and cooked through.
- Add olive oil to a frying pan with the shallots and garlic. Put on medium heat and cook until lightly golden.
- Add the beans and spinach, cook until wilted. Remove from heat. Season with salt, pepper and lemon juice.
- Serve the beans into bowls, top with the sausages, some salmoriglio, crushed croutons and chilli flakes.
