Ingredients

  • 2 red onions, thinly sliced
  • 4 tbsp cornflour
  • 4 tsp cumin
  • 1 avocado, mashed
  • ½ mango, diced
  • ½ red onion, finely chopped
  • 1 green chilli, finely chopped
  • 15g coriander, chopped
  • ½ lime
  • 4 tbsp chipotle paste
  • 2 tsp garlic powder
  • 1 tsp smoked paprika
  • 4 burger buns
  • 4 burger patties

Steps

  1. Add red onions to a bowl. Add the cornflour and ground cumin and toss to separate the onion and coat.
  2. Shake off excess cornflour then air fry the onion until golden brown and crispy. Season with salt.
  3. In a bowl mix the avocado, mango, red onion, green chilli and coriander. Squeeze over lime juice.
  4. Combine the chipotle paste, garlic powder and smoked paprika vegetable oil and a pinch of salt and pepper.
  5. Heat a non-stick frying pan over medium heat. Toast the buns then set aside.
  6. Brush the burger patties with a little vegetable oil. Heat the same pan and add the patties and cook for 2 minutes.
  7. Flip and spoon a third of the chipotle sauce over the burgers. Cook for a further 2 mins.
  8. Flip again, spoon another third of the chipotle sauce over the burgers, and cook for a further 2 mins.
  9. Flip one last time, spooning the remaining chipotle sauce over the burgers, and cook for a final 2 mins.
