Spicy chipotle burger
Ingredients
- 2 red onions, thinly sliced
- 4 tbsp cornflour
- 4 tsp cumin
- 1 avocado, mashed
- ½ mango, diced
- ½ red onion, finely chopped
- 1 green chilli, finely chopped
- 15g coriander, chopped
- ½ lime
- 4 tbsp chipotle paste
- 2 tsp garlic powder
- 1 tsp smoked paprika
- 4 burger buns
- 4 burger patties
Steps
- Add red onions to a bowl. Add the cornflour and ground cumin and toss to separate the onion and coat.
- Shake off excess cornflour then air fry the onion until golden brown and crispy. Season with salt.
- In a bowl mix the avocado, mango, red onion, green chilli and coriander. Squeeze over lime juice.
- Combine the chipotle paste, garlic powder and smoked paprika vegetable oil and a pinch of salt and pepper.
- Heat a non-stick frying pan over medium heat. Toast the buns then set aside.
- Brush the burger patties with a little vegetable oil. Heat the same pan and add the patties and cook for 2 minutes.
- Flip and spoon a third of the chipotle sauce over the burgers. Cook for a further 2 mins.
- Flip again, spoon another third of the chipotle sauce over the burgers, and cook for a further 2 mins.
- Flip one last time, spooning the remaining chipotle sauce over the burgers, and cook for a final 2 mins.
