Ingredients

  • 2 tsp garam masala
  • 2 tsp cayenne
  • 240g tinned chickpeas
  • 1 red onion
  • 2 courgettes
  • 2 bell peppers
  • 1 cauliflower
  • 1 bulb garlic
  • 1 cucumber, grated
  • 1 clove garlic, grated
  • 25g mint, finely chopped
  • Juice of 1 lemon
  • 400g yoghurt
  • 30g pomegranate seeds
  • 4 pitta breads

Steps

  1. Preheat oven to 180°C.
  2. Chop the courgettes, red onion and peppers into bite-size pieces. Break the cauliflower into florets. Peel the garlic.
  3. Place on a baking tray. Pour in a tin of chickpeas with some of the starchy water.
  4. Mix with olive oil, cayenne, garam masala, salt and pepper. Place in oven for 30 minutes.
  5. Meanwhile add yogurt to a bowl. Add mint, lemon juice, cucumber and garlic. Mix until combined then season to taste.
  6. Warm the pitta. Load it with vegetables, tzatziki and pomegranate seeds.
