Spiced veggie gyros
Ingredients
- 2 tsp garam masala
- 2 tsp cayenne
- 240g tinned chickpeas
- 1 red onion
- 2 courgettes
- 2 bell peppers
- 1 cauliflower
- 1 bulb garlic
- 1 cucumber, grated
- 1 clove garlic, grated
- 25g mint, finely chopped
- Juice of 1 lemon
- 400g yoghurt
- 30g pomegranate seeds
- 4 pitta breads
Steps
- Preheat oven to 180°C.
- Chop the courgettes, red onion and peppers into bite-size pieces. Break the cauliflower into florets. Peel the garlic.
- Place on a baking tray. Pour in a tin of chickpeas with some of the starchy water.
- Mix with olive oil, cayenne, garam masala, salt and pepper. Place in oven for 30 minutes.
- Meanwhile add yogurt to a bowl. Add mint, lemon juice, cucumber and garlic. Mix until combined then season to taste.
- Warm the pitta. Load it with vegetables, tzatziki and pomegranate seeds.
