Nachos
Ingredients
- ½ red onion, finely chopped
- 1 clove garlic, minced
- Juice of 1 lime
- 3 tomatoes, finely diced
- 1 green chilli, finely chopped
- Coriander, finely chopped
- 1 onion, finely diced
- 4 cloves garlic, minced
- 400g vegan mince
- 200g refried beans
- 150ml water
- 1 tsp paprika
- ½ tsp coriander
- ½ tsp cumin
- ½ tsp salt
- ½ tsp black pepper
- 2 tsp dark soy sauce
- 150ml water
- 340g tortilla chips
- 1 batch vegan nacho cheese
- 1 avocado, diced
- Juice of half a lime
- pickled jalapeños
Steps
- In a medium bowl, mix ingredients from red onion to coriander and set aside.
- Place the wok over medium heat and add oil. Once hot, add the onion and garlic and fry for 2 minutes.
- Add the mince, spices, salt, pepper and dark soy sauce. Fry until lightly browned.
- Add the refried beans and the water, stir and cook until most of the water has disappeared.
- Reduce the stove to the lowest heat possible while you assemble the nachos.
- Spread tortilla chips on a plate. Top with a drizzle of nacho cheese, followed mince.
- Add the pico de gallo and diced avocado and a good squeeze of lime and the jalapeños.
