Ingredients

  • ½ red onion, finely chopped
  • 1 clove garlic, minced
  • Juice of 1 lime
  • 3 tomatoes, finely diced
  • 1 green chilli, finely chopped
  • Coriander, finely chopped
  • 1 onion, finely diced
  • 4 cloves garlic, minced
  • 400g vegan mince
  • 200g refried beans
  • 150ml water
  • 1 tsp paprika
  • ½ tsp coriander
  • ½ tsp cumin
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 tsp dark soy sauce
  • 150ml water
  • 340g tortilla chips
  • 1 batch vegan nacho cheese
  • 1 avocado, diced
  • Juice of half a lime
  • pickled jalapeños

Steps

  1. In a medium bowl, mix ingredients from red onion to coriander and set aside.
  2. Place the wok over medium heat and add oil. Once hot, add the onion and garlic and fry for 2 minutes.
  3. Add the mince, spices, salt, pepper and dark soy sauce. Fry until lightly browned.
  4. Add the refried beans and the water, stir and cook until most of the water has disappeared.
  5. Reduce the stove to the lowest heat possible while you assemble the nachos.
  6. Spread tortilla chips on a plate. Top with a drizzle of nacho cheese, followed mince.
  7. Add the pico de gallo and diced avocado and a good squeeze of lime and the jalapeños.
