Spicy garlicky cauliflower bowl
Ingredients
- 2 cauliflowers, cut into florets
- 1 tsp paprika
- 1 tbsp harissa
- Vegan yogurt
- Minced garlic
- Chopped parsley
- 4 cloves garlic, minced
- 1 tsp chilli flakes
- 2 tsp paprika
- Parsley, finely chopped
- Coriander, finely chopped
- Spring onions, sliced
- Juice of 1 lemon
- Flatbreads
Steps
- Drizzle the cauliflower with olive oil, paprika, harissa, salt and pepper.
- Toss well to ensure each piece is coated well.
- Pop it in the oven to bake at 180°C for 25-20 minutes until charred and crispy.
- Whisk together yogurt, garlic, parsley and season with salt and pepper.
- Heat three tablespoons of olive oil. Add minced garlic and cook until fragrant.
- Add chilli flakes and paprika, mix and cook for 3 seconds.
- Stir in parsley, coriander and scallions. Add lemon juice and season.
- Cook on low heat for a few minutes, then remove from the heat
- Toast the flatbread.
