Ingredients

  • 2 cauliflowers, cut into florets
  • 1 tsp paprika
  • 1 tbsp harissa
  • Vegan yogurt
  • Minced garlic
  • Chopped parsley
  • 4 cloves garlic, minced
  • 1 tsp chilli flakes
  • 2 tsp paprika
  • Parsley, finely chopped
  • Coriander, finely chopped
  • Spring onions, sliced
  • Juice of 1 lemon
  • Flatbreads

Steps

  1. Drizzle the cauliflower with olive oil, paprika, harissa, salt and pepper.
  2. Toss well to ensure each piece is coated well.
  3. Pop it in the oven to bake at 180°C for 25-20 minutes until charred and crispy.
  4. Whisk together yogurt, garlic, parsley and season with salt and pepper.
  5. Heat three tablespoons of olive oil. Add minced garlic and cook until fragrant.
  6. Add chilli flakes and paprika, mix and cook for 3 seconds.
  7. Stir in parsley, coriander and scallions. Add lemon juice and season.
  8. Cook on low heat for a few minutes, then remove from the heat
  9. Toast the flatbread.
