Miso glazed sweet potato
Ingredients
- 2 large sweet potatoes
- 1 ½ tbsp miso paste
- 1 ½ tbsp maple syrup
- ¾ cup water
- 1 ½ tbsp vegan butter
- 400g tofu
- 4 tbsp olive oil
- 3 tsp white miso
- 4 tbsp nooch
- ½ tsp garlic powder
- Juice of 2 lemons
Steps
- Start by searing the sweet potato in some oil until charred each side, 3/4 mins each side.
- Whilst they’re charring, mix together the miso, water, maple syrup until all lumps have gone.
- Add the butter to the sweet potatoes in the pan until melted.
- Pour over the miso mixture and make sure it gets underneath the sweet potatoes.
- Add to the oven at 190°C for 15 mins, flipping the potatoes half way.
- Add the ingredients from tofu to lemon juice and 1 tbsp of water to a blender.
- Blend until smooth and season to taste with salt and pepper. Loosen with water if necessary.
- Make a bed of whipped tofu on the plates. Top with sweet potato and drizzle over remaining miso mix.
