BBQ shredded tofu tacos
Ingredients
- 1 red onion, thinly sliced
- Juice of 1 ½ limes
- 1 block tofu, grated
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp onion granules
- ½ tsp cayenne
- 2 tbsp soy sauce
- ½ cup bbq sauce
- 2 tbsp maple syrup
- ½ a mango, diced
- ½ of a red chilli, finely chopped
- ½ of a small red onion, diced
- Juice of ½ a lime
- Coriander, finely chopped
- 1 large avocado
- Coriander, roughly chopped
- Juice of 1/4 lime
- Tortillas
Steps
- Place red onion in a bowl with lime juice, seal and refrigerate for at least 4 hours.
- Mix ingredients from mango to coriander for the mango salsa.
- Heat oil in the wok, once hot add the tofu. Cook until starting to crisp.
- Reduce the heat to medium and add the spices. Stir to coat and cook until fragrant.
- Add BBQ sauce and thin with enough water to make a sauce. Stir to coat.
- Reduce heat and cook for 15 minutes. Remove lid and stir occasionally.
- Mash the avocado with a fork. Stir in the lime juice and coriander. Season to taste.
- Assemble tacos by spreading with mashed avocado. Top with salsa, tofu and red onion.
