Ingredients

  • 1 red onion, thinly sliced
  • Juice of 1 ½ limes
  • 1 block tofu, grated
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp onion granules
  • ½ tsp cayenne
  • 2 tbsp soy sauce
  • ½ cup bbq sauce
  • 2 tbsp maple syrup
  • ½ a mango, diced
  • ½ of a red chilli, finely chopped
  • ½ of a small red onion, diced
  • Juice of ½ a lime
  • Coriander, finely chopped
  • 1 large avocado
  • Coriander, roughly chopped
  • Juice of 1/4 lime
  • Tortillas

Steps

  1. Place red onion in a bowl with lime juice, seal and refrigerate for at least 4 hours.
  2. Mix ingredients from mango to coriander for the mango salsa.
  3. Heat oil in the wok, once hot add the tofu. Cook until starting to crisp.
  4. Reduce the heat to medium and add the spices. Stir to coat and cook until fragrant.
  5. Add BBQ sauce and thin with enough water to make a sauce. Stir to coat.
  6. Reduce heat and cook for 15 minutes. Remove lid and stir occasionally.
  7. Mash the avocado with a fork. Stir in the lime juice and coriander. Season to taste.
  8. Assemble tacos by spreading with mashed avocado. Top with salsa, tofu and red onion.
