Ingredients

  • 1 block tofu
  • 1 courgette
  • 1 red onion
  • 1 red pepper
  • 1 orange pepper
  • 1 pineapple
  • 2 tbsp chipotle paste
  • 2 tbsp maple syrup
  • 1 tbsp soy sauce
  • 1 tbsp minced garlic
  • Juice of half a lime
  • 1 tbsp olive oil
  • Coriander
  • Flatbreads
  • Aioli

Steps

  1. Freeze the tofu then defrost it overnight.
  2. Drain and press the tofu then rip into chunks.
  3. Cut the bell peppers, pineapple, courgette and red onion into chunks.
  4. Mix ingredients from chipotle paste to olive oil.
  5. Add the tofu and vegetables to a large bowl and coat in the glaze. Refrigerate.
  6. Assemble skewers until all the ingredients are used.
  7. On medium heat, add the skewers to a griddle pan and lightly brush with oil.
  8. Cook for a few mins on each side until slightly charred.
  9. Drizzle flatbread with aioli, add skewers then top with coriander.
