Chipotle maple skewers
Ingredients
- 1 block tofu
- 1 courgette
- 1 red onion
- 1 red pepper
- 1 orange pepper
- 1 pineapple
- 2 tbsp chipotle paste
- 2 tbsp maple syrup
- 1 tbsp soy sauce
- 1 tbsp minced garlic
- Juice of half a lime
- 1 tbsp olive oil
- Coriander
- Flatbreads
- Aioli
Steps
- Freeze the tofu then defrost it overnight.
- Drain and press the tofu then rip into chunks.
- Cut the bell peppers, pineapple, courgette and red onion into chunks.
- Mix ingredients from chipotle paste to olive oil.
- Add the tofu and vegetables to a large bowl and coat in the glaze. Refrigerate.
- Assemble skewers until all the ingredients are used.
- On medium heat, add the skewers to a griddle pan and lightly brush with oil.
- Cook for a few mins on each side until slightly charred.
- Drizzle flatbread with aioli, add skewers then top with coriander.
