Ingredients

  • 4 eggplants, peeled and diced
  • 5 tbsp cornstarch
  • 6 cloves garlic, sliced
  • 5 tbsp soy sauce
  • 2 tbsp dark soy sauce
  • 2 tbsp vegan oyster sauce
  • 60ml water
  • 1 tsp sugar
  • 3 stalks scallion, diced
  • 1 bell pepper, diced
  • Garlic shoots, sliced
  • Rice

Steps

  1. In a large bowl toss the eggplant with cornstarch and a pinch of salt.
  2. In a bowl mix soy sauces, vegan oyster sauce, water and sugar.
  3. Heat wok over high. Add oil, once hot, add the eggplant and fry until slightly browned.
  4. Remove from the wok and set aside.
  5. Add garlic to the wok. Cook until fragrant.
  6. Add eggplant, sauce and green pepper. Cook until most of the sauce is gone.
