Red braised eggplant
Ingredients
- 4 eggplants, peeled and diced
- 5 tbsp cornstarch
- 6 cloves garlic, sliced
- 5 tbsp soy sauce
- 2 tbsp dark soy sauce
- 2 tbsp vegan oyster sauce
- 60ml water
- 1 tsp sugar
- 3 stalks scallion, diced
- 1 bell pepper, diced
- Garlic shoots, sliced
- Rice
Steps
- In a large bowl toss the eggplant with cornstarch and a pinch of salt.
- In a bowl mix soy sauces, vegan oyster sauce, water and sugar.
- Heat wok over high. Add oil, once hot, add the eggplant and fry until slightly browned.
- Remove from the wok and set aside.
- Add garlic to the wok. Cook until fragrant.
- Add eggplant, sauce and green pepper. Cook until most of the sauce is gone.
