Ingredients

  • 1 cauliflower, cut into florets
  • 1 can butter beans
  • 6 cloves garlic, minced
  • 2 shallots, diced
  • 1 cup cashews
  • 1 tsp nutmeg
  • 3 tbsp nooch
  • Juice of half a lemon
  • 200ml veg stock
  • Salt and pepper
  • 1 block tofu
  • 2 tbsp Cajun spice blend
  • Vegan cheese
  • Smoked paprika
  • Olive oil
  • Salad

Steps

  1. Drain and press the tofu. Once done cut into fingers.
  2. Start by frying off the cauliflower, onion, garlic and cashews in some oil.
  3. Season with nutmeg and then add the butter beans and lemon juice and season.
  4. Let that cook for 4 mins and then add the stock and cover with a lid.
  5. Simmer until cauliflower has softened then add the nooch and blend.
  6. Season tofu with cajun. Fry in a skillet with some oil until charred on each side.
  7. Cook your pasta to packet instructions then once cooked combine it with the blended Alfredo sauce and combine the two with some pasta water.
  8. Add to a baking dish, sprinkle with cheese, press in the tofu, drizzle with more oil and paprika.
  9. Cook in the oven at 190C for 15 mins or until crispy on top.
