Ingredients

  • 1 onion, diced
  • 4 cloves garlic, minced
  • 450g vegan mince
  • 1 tbsp cornstarch
  • 1 tbsp chilli powder
  • 1 tsp oregano
  • ½ tsp thyme
  • 1 tsp paprika
  • ½ teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tbsp nooch
  • 1 ½ cups warm nut milk
  • 1 cup vegan beef broth
  • 3 tbsp tomato paste
  • 2 cups pasta
  • 1 cup grated vegan cheddar
  • 2 tbsp chopped parsley

Steps

  1. Heat a large skillet over medium high heat and add in the oil, onions and garlic.
  2. Sauté for 3 to 4 minutes, or until the onions have softened and the garlic is fragrant.
  3. Add the mince and break it up with the spatula. Cook, stirring often until slightly browned.
  4. In a small bowl mix ingredients from cornstarch to nooch until uniform.
  5. Sprinkle the mixture over the mince in the pan and add the tomato paste, stir well to distribute.
  6. Mix in the nut milk, broth and pasta. Bring to a boil.
  7. Once boiling, cover, reduce heat to a simmer and cook until pasta is al dente.
  8. Remove from heat, mix in shredded cheese and stir until melted. Top with parsley.
