Vegan hamburger helper
Ingredients
- 1 onion, diced
- 4 cloves garlic, minced
- 450g vegan mince
- 1 tbsp cornstarch
- 1 tbsp chilli powder
- 1 tsp oregano
- ½ tsp thyme
- 1 tsp paprika
- ½ teaspoon salt
- 1/4 teaspoon pepper
- 2 tbsp nooch
- 1 ½ cups warm nut milk
- 1 cup vegan beef broth
- 3 tbsp tomato paste
- 2 cups pasta
- 1 cup grated vegan cheddar
- 2 tbsp chopped parsley
Steps
- Heat a large skillet over medium high heat and add in the oil, onions and garlic.
- Sauté for 3 to 4 minutes, or until the onions have softened and the garlic is fragrant.
- Add the mince and break it up with the spatula. Cook, stirring often until slightly browned.
- In a small bowl mix ingredients from cornstarch to nooch until uniform.
- Sprinkle the mixture over the mince in the pan and add the tomato paste, stir well to distribute.
- Mix in the nut milk, broth and pasta. Bring to a boil.
- Once boiling, cover, reduce heat to a simmer and cook until pasta is al dente.
- Remove from heat, mix in shredded cheese and stir until melted. Top with parsley.
