Ingredients

  • 1 block tofu
  • ¼ cup olive oil
  • 1 lemon, juiced
  • 3 cloves garlic
  • 2 tbsp agave
  • 1 ½ tsp cumin
  • 1 ½ tsp smoked paprika
  • ¾ tsp cinnamon
  • ¾ tsp ginger
  • ¾ tsp oregano
  • ¾ tsp turmeric
  • 1 red onion, thinly sliced
  • ½ cup apple cider vinegar
  • 1 tbsp brown sugar
  • 1 ½ tsp salt
  • 1 cup hot or warm water
  • Flatbreads
  • Vegan aioli
  • Avocado
  • Fresh coriander
  • Spinach
  • Lemon
  • Olive oil
  • Sea salt

Steps

  1. Start by pressing the tofu from all its juices and slicing into cubes.
  2. Add ingredients from olive oil to turmeric to a bowl and mix well.
  3. Layer your tofu cubes into the marinade and cover them as much as you can.
  4. Let the tofu sit in there for as long as you can.
  5. Meanwhile add the red onion, vinegar, sugar and salt to a container and mix well.
  6. Add warm water until onions are fully submerged. Refrigerate.
  7. Now add the tofu pieces to an air fryer or oven at 200C for 10 mins.
  8. In a large bowl toss together the spinach, olive oil, lemon and sea salt.
  9. Layer your plate with a flatbread, spoon some aioli on top of the flatbread.
  10. Add spinach, pickled red onions, slice avocado and tofu pieces.
