Tofu shawarma flatbread
Ingredients
- 1 block tofu
- ¼ cup olive oil
- 1 lemon, juiced
- 3 cloves garlic
- 2 tbsp agave
- 1 ½ tsp cumin
- 1 ½ tsp smoked paprika
- ¾ tsp cinnamon
- ¾ tsp ginger
- ¾ tsp oregano
- ¾ tsp turmeric
- 1 red onion, thinly sliced
- ½ cup apple cider vinegar
- 1 tbsp brown sugar
- 1 ½ tsp salt
- 1 cup hot or warm water
- Flatbreads
- Vegan aioli
- Avocado
- Fresh coriander
- Spinach
- Lemon
- Olive oil
- Sea salt
Steps
- Start by pressing the tofu from all its juices and slicing into cubes.
- Add ingredients from olive oil to turmeric to a bowl and mix well.
- Layer your tofu cubes into the marinade and cover them as much as you can.
- Let the tofu sit in there for as long as you can.
- Meanwhile add the red onion, vinegar, sugar and salt to a container and mix well.
- Add warm water until onions are fully submerged. Refrigerate.
- Now add the tofu pieces to an air fryer or oven at 200C for 10 mins.
- In a large bowl toss together the spinach, olive oil, lemon and sea salt.
- Layer your plate with a flatbread, spoon some aioli on top of the flatbread.
- Add spinach, pickled red onions, slice avocado and tofu pieces.
