Ingredients

  • 500g oyster mushrooms
  • 2 carrots, thin strips
  • 1 onion, sliced
  • 1 pear, grated
  • 4 cloves garlic, finely chopped
  • 1 tbsp ginger, grated
  • 4 tbsp soy sauce
  • 1 tbsp sugar
  • 1 tbsp gochujang
  • 2 tbsp sesame oil
  • Rice
  • Spring onions
  • 1 tsp toasted sesame seeds

Steps

  1. Hand pull the oyster mushrooms into strips.
  2. In a big bowl add mushrooms, carrots, onion, pear, garlic, ginger, soy sauce, sugar, gochujang and sesame oil.
  3. Mix well and let it marinate for at least 1 hour.
  4. Cut the spring onion whites into 1-inch pieces and finely slice the greens.
  5. Head the griddle over high, once hot add oil.
  6. Add the marinated ingredients and grill until most of the sauce is gone and mushrooms are slightly charred.
  7. Add the spring onion whites and grill until just cooked.
  8. Serve over rice and top with spring onion greens and sesame seeds.
