Oyster mushroom bulgogi
Ingredients
- 500g oyster mushrooms
- 2 carrots, thin strips
- 1 onion, sliced
- 1 pear, grated
- 4 cloves garlic, finely chopped
- 1 tbsp ginger, grated
- 4 tbsp soy sauce
- 1 tbsp sugar
- 1 tbsp gochujang
- 2 tbsp sesame oil
- Rice
- Spring onions
- 1 tsp toasted sesame seeds
Steps
- Hand pull the oyster mushrooms into strips.
- In a big bowl add mushrooms, carrots, onion, pear, garlic, ginger, soy sauce, sugar, gochujang and sesame oil.
- Mix well and let it marinate for at least 1 hour.
- Cut the spring onion whites into 1-inch pieces and finely slice the greens.
- Head the griddle over high, once hot add oil.
- Add the marinated ingredients and grill until most of the sauce is gone and mushrooms are slightly charred.
- Add the spring onion whites and grill until just cooked.
- Serve over rice and top with spring onion greens and sesame seeds.
