Ingredients

  • 1 red onion, thinly sliced
  • Juice of 1 ½ limes
  • 600g cauliflower
  • 200g vegan yogurt
  • 3 tbsp cajun spice
  • 1 tbsp vegetable oil
  • 75g panko crumbs
  • Zest and juice ½ lime
  • 2 tbsp chopped coriander
  • 1 carrot, peeled
  • 100g cabbage
  • 1 avocado, sliced
  • 8 corn tortillas

Steps

  1. Place red onion in a bowl with lime juice, seal and refrigerate for at least 4 hours.
  2. Cut the cauliflower into florets then toss in a bowl with 100g yogurt and 2 tablespoons cajun.
  3. Mix remaining cajun with the oil and crumbs. Add cauliflower and toss to coat.
  4. Add to the air fryer and cook until golden and tender, shaking halfway.
  5. In the same bowl mix the lime zest and juice, remaining yoghurt and the coriander.
  6. Grate in the carrot and shred the cabbage. Season with salt and pepper.
  7. Warm the tortillas following pack instructions.
  8. Add cauliflower to each taco. Top with slaw, pickled onions and a few slices of avocado.
