Cajun cauliflower tacos
Ingredients
- 1 red onion, thinly sliced
- Juice of 1 ½ limes
- 600g cauliflower
- 200g vegan yogurt
- 3 tbsp cajun spice
- 1 tbsp vegetable oil
- 75g panko crumbs
- Zest and juice ½ lime
- 2 tbsp chopped coriander
- 1 carrot, peeled
- 100g cabbage
- 1 avocado, sliced
- 8 corn tortillas
Steps
- Place red onion in a bowl with lime juice, seal and refrigerate for at least 4 hours.
- Cut the cauliflower into florets then toss in a bowl with 100g yogurt and 2 tablespoons cajun.
- Mix remaining cajun with the oil and crumbs. Add cauliflower and toss to coat.
- Add to the air fryer and cook until golden and tender, shaking halfway.
- In the same bowl mix the lime zest and juice, remaining yoghurt and the coriander.
- Grate in the carrot and shred the cabbage. Season with salt and pepper.
- Warm the tortillas following pack instructions.
- Add cauliflower to each taco. Top with slaw, pickled onions and a few slices of avocado.
