Grilled broccoli grain bowl
Ingredients
- 400g tenderstem broccoli
- 150ml olive oil
- ¼ cup red onion
- 3 garlic cloves
- 2 fresh chillies, diced
- 1 cup coriander
- ½ cup parsley
- Juice of 1 ½ limes
- ½ cup olive oil
- ¾ tsp dried oregano
- 1 tbsp red wine vinegar
- ½ salt
- ½ tsp pepper
- 3 mixed grain pouches
- 200g vegan feta
Steps
- Trim and halve the broccoli stems. Lay out in a single layer on a baking tray.
- Drizzle with a splash of extra virgin olive oil and season with salt and black pepper.
- Grill, turning with tongs, until the broccoli is charred on both sides and the stalks are tender.
- Place the onion, garlic and chillies in a blender, blend until finely chopped.
- Add coriander, parsley and oregano and blend.
- Add remaining ingredients and pulse a few more times until well combined.
- Squeeze the grain pouches, then heat in the microwave following the packet instructions.
- Drizzle over most of the chimichurri, then crumble over half the feta and stir together.
- Top with the charred broccoli and crumble over the remaining feta. Drizzle with extra chimichurri.
