Ingredients

  • 1 block vegan feta
  • 300g cherry tomatoes
  • 8 cloves garlic, smashed
  • 1 tsp dried oregano
  • ½ tsp chilli flakes
  • 3 sprigs thyme
  • ½ tsp pepper
  • 2 tbsp olive oil
  • 240g pasta
  • 1 handful spinach
  • Basil
  • Zest of 1 lemon

Steps

  1. Preheat your oven to 200°C. In a baking dish add cherry tomatoes and garlic.
  2. Drizzle with olive oil. Toss to coat. Add feta to the centre of the dish.
  3. Season with oregano, salt and pepper. Scatter thyme sprigs over tomatoes.
  4. Bake for 20 minutes. Meanwhile cook pasta according to package instructions, set aside some pasta water.
  5. Remove dish from the oven.
  6. Add approximately ⅓ cup of pasta water to feta and tomato dish and mix well.
  7. Toss cooked pasta into the dish along with fresh basil and stir to coat.
