Marry me tofu
Ingredients
- 2 blocks tofu
- Chopped parsley
- ¼ cup soy sauce
- ¼ cup nooch
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- 2 tbsp hot sauce
- ¼ cup neutral oil
- 2 tbsp water
- 2 tsp lemon juice
- 2 tbsp vegan butter
- 5 cloves garlic, minced
- 1 tbsp Italian seasoning
- 1 tsp chilli flakes
- 2 cups vegetable stock
- ½ cup cream
- 2 - 3 tsp dijon mustard
- ½ cup vegan parmesan
- ⅓ cup sun-dried tomatoes

Steps
- Mix ingredients from soy sauce to lemon juice for the marinade.
- Cut each block of tofu into 3 filets. Lightly score the filets on each side.
- Coat the fillets in the marinade, rest for at least 30 minutes.
- Cook the pasta in salted water according to package instructions.
- Heat a pan to medium high, add a little oil and grill the filets for about 5 minutes per side.
- In the same pan, over low heat, add the vegan butter and melt.
- Add the garlic, chilli flakes, and Italian seasoning. Stir to combine and cook for 1 minute.
- Stir in the stock and then the cream. Add in the dijon mustard and whisk to combine.
- Bring to a simmer, add the sun-dried tomatoes and parmesan and stir to combine.
- Add the tofu back in and simmer for a few minutes.
