Ingredients

  • 1 cauliflower, quartered
  • 2 cups basmati rice
  • 1 onion, sliced
  • 4 tomatoes, sliced
  • 2 tbsp of olive oil
  • ½ tsp salt
  • 1 ½ tsp salt
  • 1 tsp baharat spice
  • 1 tsp sumac
  • 1/2 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 3 tbsp tomato paste
  • 4 minced garlic cloves
  • 1/4 cup olive oil
  • 1 tbsp date syrup
  • 4 cups boiled water

Steps

  1. Preheat the oven to 200°C.
  2. In an oven safe pan drizzle olive oil and add the tomatoes, onions, and salt.
  3. Place quartered cauliflower on top.
  4. Pour the rice evenly in between the cauliflower pieces.
  5. Mix ingredients from salt to water for sauce.
  6. Pour the sauce gently over the rice and cauliflower.
  7. Cover the pan with wet parchment paper and cover with aluminium foil on top of it.
  8. Bake for 1 hour then remove the foil and paper. Broil for five minutes or until golden brown.
