Cauliflower T'Beet
Ingredients
- 1 cauliflower, quartered
- 2 cups basmati rice
- 1 onion, sliced
- 4 tomatoes, sliced
- 2 tbsp of olive oil
- ½ tsp salt
- 1 ½ tsp salt
- 1 tsp baharat spice
- 1 tsp sumac
- 1/2 tsp cumin
- 1 tsp paprika
- 1/2 tsp black pepper
- 3 tbsp tomato paste
- 4 minced garlic cloves
- 1/4 cup olive oil
- 1 tbsp date syrup
- 4 cups boiled water
Steps
- Preheat the oven to 200°C.
- In an oven safe pan drizzle olive oil and add the tomatoes, onions, and salt.
- Place quartered cauliflower on top.
- Pour the rice evenly in between the cauliflower pieces.
- Mix ingredients from salt to water for sauce.
- Pour the sauce gently over the rice and cauliflower.
- Cover the pan with wet parchment paper and cover with aluminium foil on top of it.
- Bake for 1 hour then remove the foil and paper. Broil for five minutes or until golden brown.
