Orange & quinoa salad
Ingredients
- 100g quinoa
- 6 small carrots, peeled
- 4 oranges, small
- Seeds of 1 pomegranate
- 25g parsley, chopped
- 10g pistachios , chopped
- 3 tbsp tahini
- 2 tsp soy sauce
- 4 tsp white wine vinegar
- 1 tbsp lemon juice
- ½ tbsp agave
- ¼ tsp salt
- 1 clove garlic, crushed
Steps
- Cook quinoa as per pack instructions and set aside to cool.
- Meanwhile, use a peeler to slice the carrots into ribbons and place in a large bowl.
- Peel each orange and remove the pith, then slice into rounds.
- Add to the bowl with the pomegranate seeds, parsley and quinoa.
- Mix dressing ingredients from tahini to garlic into a jar and shake well.
- Toss all the salad ingredients together and serve with the dressing and pistachios on top.
