Ingredients

  • 100g quinoa
  • 6 small carrots, peeled
  • 4 oranges, small
  • Seeds of 1 pomegranate
  • 25g parsley, chopped
  • 10g pistachios , chopped
  • 3 tbsp tahini
  • 2 tsp soy sauce
  • 4 tsp white wine vinegar
  • 1 tbsp lemon juice
  • ½ tbsp agave
  • ¼ tsp salt
  • 1 clove garlic, crushed

Steps

  1. Cook quinoa as per pack instructions and set aside to cool.
  2. Meanwhile, use a peeler to slice the carrots into ribbons and place in a large bowl.
  3. Peel each orange and remove the pith, then slice into rounds.
  4. Add to the bowl with the pomegranate seeds, parsley and quinoa.
  5. Mix dressing ingredients from tahini to garlic into a jar and shake well.
  6. Toss all the salad ingredients together and serve with the dressing and pistachios on top.
