Ingredients

  • 500g new potatoes
  • 2 tsp paprika
  • 2 tsp cumin
  • 1 tsp coriander
  • Pinch of cinnamon
  • 1 tsp chilli flakes
  • 3 tbsp olive oil
  • Juice of a lemon
  • Zest of a lemon
  • 1 whole garlic bulb
  • 2 tbsp yoghurt
  • 1 tsp harissa paste
  • ½ pomegranate
  • Chopped parsley
  • Chopped coriander

Steps

  1. Clean your potatoes and put them into a pan with salted water.
  2. Bring to a boil then lower to a simmer, cook until softened.
  3. Meanwhile, toast the spices in a dry pan until fragrant.
  4. Drain the potatoes and leave to dry. Preheat oven to 210°C.
  5. Remove spices from the heat and add olive oil, salt and juice of half a lemon.
  6. Mix the potatoes and spice mix so that all of the potatoes are covered.
  7. Place the potatoes on a baking tray and squash slightly.
  8. Place them in the oven with your garlic for 20 minutes, giving them a toss half way through.
  9. Meanwhile mix harissa with yogurt.
  10. Once potatoes are charred remove from the oven and smother in sauce.
  11. Top with chopped herbs, garlic and pomegranate seeds.
