Smashed harissa spuds
Ingredients
- 500g new potatoes
- 2 tsp paprika
- 2 tsp cumin
- 1 tsp coriander
- Pinch of cinnamon
- 1 tsp chilli flakes
- 3 tbsp olive oil
- Juice of a lemon
- Zest of a lemon
- 1 whole garlic bulb
- 2 tbsp yoghurt
- 1 tsp harissa paste
- ½ pomegranate
- Chopped parsley
- Chopped coriander
Steps
- Clean your potatoes and put them into a pan with salted water.
- Bring to a boil then lower to a simmer, cook until softened.
- Meanwhile, toast the spices in a dry pan until fragrant.
- Drain the potatoes and leave to dry. Preheat oven to 210°C.
- Remove spices from the heat and add olive oil, salt and juice of half a lemon.
- Mix the potatoes and spice mix so that all of the potatoes are covered.
- Place the potatoes on a baking tray and squash slightly.
- Place them in the oven with your garlic for 20 minutes, giving them a toss half way through.
- Meanwhile mix harissa with yogurt.
- Once potatoes are charred remove from the oven and smother in sauce.
- Top with chopped herbs, garlic and pomegranate seeds.
