Rice paper noodles
Ingredients
- 30 sheets rice paper
- 2 onions, sliced
- 8 cloves garlic, minced
- 4 tbsp soy sauce
- 4 tbsp dark soy sauce
- 4 tsp sugar
- 8 heads baby bok choy
- 4 tsp sesame oil
- 2 tsp sesame seeds
- 8 stalks green onion chopped
Steps
- Add warm water in a large shallow bowl and lightly grease a cutting board with a little oil.
- Take 5 pieces of rice paper and stack them. Soak them in the warm water for a few seconds until softened.
- Place it onto the cutting board. Using your fingers, try to get rid of any air bubbles.
- Take a sharp knife and cut into around 1-inch wide noodles. Place them in a bowl of cold water.
- Heat oil in the wok on medium-high heat and sauté minced garlic for a minute.
- Add onion and cook until just softened.
- Add soy sauces, sugar, rice paper and pak choi with a splash of water.
- Cook for 2-3 minutes while stirring frequently, adding small splashes of water as needed.
- Top with sesame seeds and spring onion.
