Ingredients

  • 450g potatoes, cubed
  • 2 tsp Chinese chilli flakes
  • 2 tsp cumin
  • ¼ tsp Sichuan peppercorn
  • 2 tbsp peanut oil
  • ¼ tsp salt
  • 2 cloves garlic, minced
  • 2 spring onions, sliced

Steps

  1. Add potatoes to a medium pot and water to cover potatoes.
  2. Bring to a boil, and continue to boil until just soft, about 5 minutes.
  3. Once done, rinse the potatoes with cold tap water to stop cooking.
  4. Drain potatoes thoroughly and let them dry a bit.
  5. Mix the chilli flakes, cumin, and Sichuan peppercorn powder in a small bowl.
  6. Heat oil in a large non-stick skillet over medium-high heat until hot.
  7. Add the potato and sprinkle with the salt.
  8. Stir a few times to coat well with oil then spread out into a single layer without overlapping.
  9. Cook, stirring occasionally, until the surfaces turn golden crispy.
  10. Add the garlic, green onion, and sprinkle with the spice mix.
  11. Pour in a bit of oil if the potatoes look dry. Cook and stir until everything is mixed.
