Ingredients

  • 350g basmati rice
  • 50g butter, cubed
  • 20 saffron strands
  • 1 ¾ tsp salt
  • 75g parsley, finely chopped
  • 75g coriander, finely chopped
  • 7 spring onions, finely sliced
  • 60g pistachios, chopped
  • 30g currants
  • 1 large handful fried onions
  • 100g tahini
  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 garlic clove, crushed

Steps

  1. Wash the rice until the water runs clear. Soak for 10 minutes then drain and set aside.
  2. Melt the butter in a saucepan on medium heat.
  3. Stir in the saffron and a teaspoon and a half of salt.
  4. Add the rice and 600ml water, bring to a boil, cover and simmer for 12 minutes.
  5. Take off the heat and leave, still covered, to rest for 10 minutes.
  6. Meanwhile put the tahini in a jar, add olive oil, salt, lemon juice, garlic and six tablespoons of cold water
  7. Seal the jar and shake it like a person possessed.
  8. Put the herbs, currants and pistachios in a large bowl
  9. Add the rested rice and mix really well
