Vegan egg fried rice
Ingredients
- 250g silken tofu
- 4 tbsp chickpea flour
- ½ tsp kala namak
- 3 tbsp vegetable oil
- 5 spring onions, finely chopped
- 1 onion, diced
- 6 cloves garlic
- 2 cups diced vegetables
- 2 cups cooked rice
- 2 tsp soy sauce
- ½ tsp white pepper
- ½ tsp five-spice
- ¼ teaspoon MSG
- 2 tsp sesame oil
Steps
- In a bowl combine the tofu, flour and kala namak.
- Blend with an immersion blender until very smooth.
- Heat wok over medium and add oil. Add tofu and fry until bottom starts to firm.
- Scramble the tofu mixture with a spatula.
- Continue cooking and stir frequently until it resembles scrambled eggs. Set aside.
- Add remaining oil. Once hot add onion and cook until slightly softened.
- Add spring onion whites, mixed vegetables and garlic. Fry gently for a few minutes.
- Add the cooked rice and fry, breaking up large clumps until the rice is cooked through.
- Add the soy sauce, white pepper, five spice, MSG and tofu and stir.
- Remove from heat and add the sesame oil and spring onion greens. Stir thoroughly.
