Ingredients

  • 250g silken tofu
  • 4 tbsp chickpea flour
  • ½ tsp kala namak
  • 3 tbsp vegetable oil
  • 5 spring onions, finely chopped
  • 1 onion, diced
  • 6 cloves garlic
  • 2 cups diced vegetables
  • 2 cups cooked rice
  • 2 tsp soy sauce
  • ½ tsp white pepper
  • ½ tsp five-spice
  • ¼ teaspoon MSG
  • 2 tsp sesame oil

Steps

  1. In a bowl combine the tofu, flour and kala namak.
  2. Blend with an immersion blender until very smooth.
  3. Heat wok over medium and add oil. Add tofu and fry until bottom starts to firm.
  4. Scramble the tofu mixture with a spatula.
  5. Continue cooking and stir frequently until it resembles scrambled eggs. Set aside.
  6. Add remaining oil. Once hot add onion and cook until slightly softened.
  7. Add spring onion whites, mixed vegetables and garlic. Fry gently for a few minutes.
  8. Add the cooked rice and fry, breaking up large clumps until the rice is cooked through.
  9. Add the soy sauce, white pepper, five spice, MSG and tofu and stir.
  10. Remove from heat and add the sesame oil and spring onion greens. Stir thoroughly.
