Scallion tofu
Ingredients
- 1 cup rice
- 1 block tofu, pressed
- 4 large scallions
- 2 red chillies, thinly sliced
- 2 tbsp vegan oyster sauce
- 2 tbsp soy sauce
- ½ tsp sugar
- 1 tbsp cornstarch
- ¾ cup of water
- Pak choi
Steps
- Clean and cook the rice.
- Cut the scallion whites into bite-size chunks, thinly slice the greens.
- Heat the wok over medium and add 2 tablespoons oil.
- Slowly slide in the tofu. Use a spatula or spoon and cut up tofu into chunks.
- Let each side pan fry until slightly golden where tofu can hold their shape.
- In a bowl mix scallion whites, oyster sauce, soy sauce, sugar and cornstarch with water.
- When tofu is done, add the sauce and pak choi, and gently toss to combine.
- Let it simmer for about 30 seconds until flavours meld.
- Garnish with green parts of scallions and chilli and give it a final toss.
