Ingredients

  • 1 cup rice
  • 1 block tofu, pressed
  • 4 large scallions
  • 2 red chillies, thinly sliced
  • 2 tbsp vegan oyster sauce
  • 2 tbsp soy sauce
  • ½ tsp sugar
  • 1 tbsp cornstarch
  • ¾ cup of water
  • Pak choi

Steps

  1. Clean and cook the rice.
  2. Cut the scallion whites into bite-size chunks, thinly slice the greens.
  3. Heat the wok over medium and add 2 tablespoons oil.
  4. Slowly slide in the tofu. Use a spatula or spoon and cut up tofu into chunks.
  5. Let each side pan fry until slightly golden where tofu can hold their shape.
  6. In a bowl mix scallion whites, oyster sauce, soy sauce, sugar and cornstarch with water.
  7. When tofu is done, add the sauce and pak choi, and gently toss to combine.
  8. Let it simmer for about 30 seconds until flavours meld.
  9. Garnish with green parts of scallions and chilli and give it a final toss.
