Ingredients

  • ⅔ cup oil
  • 3 green chillies
  • 3 cups flour
  • 1 ¼ cups cornmeal
  • 2 tbsp baking powder
  • ¼ tsp cayenne
  • 3 ½ cups milk
  • 4 large eggs, lightly beaten
  • 2 tbsp maple syrup
  • 2 cups cheese
  • Maple syrup

Steps

  1. Finely chop and cook the chillies, set aside.
  2. In a large bowl whisk together flour, cornmeal, baking powder, 1 tablespoon plus 1 teaspoon salt, and cayenne pepper.
  3. Add milk, remaining ⅔ cup olive oil, and eggs, and maple syrup, whisking to combine.
  4. Fold in the cheddar cheese and chillies.
  5. Spray waffle iron with cooking spray. Pour batter into waffle iron and cook until golden brown.
  6. Eat half of the waffles while cooking because Jess said so.
