Cheddar and green chile waffles
Ingredients
- ⅔ cup oil
- 3 green chillies
- 3 cups flour
- 1 ¼ cups cornmeal
- 2 tbsp baking powder
- ¼ tsp cayenne
- 3 ½ cups milk
- 4 large eggs, lightly beaten
- 2 tbsp maple syrup
- 2 cups cheese
- Maple syrup
Steps
- Finely chop and cook the chillies, set aside.
- In a large bowl whisk together flour, cornmeal, baking powder, 1 tablespoon plus 1 teaspoon salt, and cayenne pepper.
- Add milk, remaining ⅔ cup olive oil, and eggs, and maple syrup, whisking to combine.
- Fold in the cheddar cheese and chillies.
- Spray waffle iron with cooking spray. Pour batter into waffle iron and cook until golden brown.
- Eat half of the waffles while cooking because Jess said so.
