Spicy sweet chilli vegetable noodles
Ingredients
- Rice noodles
- 1 block tofu
- 2 onions
- 1 red pepper
- 1 green pepper
- 1 courgette
- 1 carrot
- 6 cloves garlic
- Ginger
- Pak choi
- ½ cup sweet chilli
- 2 tbsp boiling water
- 6 tbsp soy sauce
- 2 tsp sriracha
- 4 tbsp peanut butter
- 1 tsp sesame oil
Steps
- Drain and press the tofu.
- Heat a tbsp of oil in the wok on medium heat.
- Cook the pressed tofu until golden brown then remove from the wok.
- Add garlic and ginger, let cook for about a minute.
- Add carrots and sauté. Then add green peppers, red peppers, onion, courgette, pak choi one at a time.
- In a bowl whisk together the sweet chilli, soy sauce, sriracha, water and peanut butter.
- Cook the noodles according to packet directions
- Add the tofu, noodles and sauce into the vegetables and mix well.
