Spicy sweet chilli vegetable noodles

Ingredients

  • Rice noodles
  • 1 block tofu
  • 2 onions
  • 1 red pepper
  • 1 green pepper
  • 1 courgette
  • 1 carrot
  • 6 cloves garlic
  • Ginger
  • Pak choi
  • ½ cup sweet chilli
  • 2 tbsp boiling water
  • 6 tbsp soy sauce
  • 2 tsp sriracha
  • 4 tbsp peanut butter
  • 1 tsp sesame oil

Steps

  1. Drain and press the tofu.
  2. Heat a tbsp of oil in the wok on medium heat.
  3. Cook the pressed tofu until golden brown then remove from the wok.
  4. Add garlic and ginger, let cook for about a minute.
  5. Add carrots and sauté. Then add green peppers, red peppers, onion, courgette, pak choi one at a time.
  6. In a bowl whisk together the sweet chilli, soy sauce, sriracha, water and peanut butter.
  7. Cook the noodles according to packet directions
  8. Add the tofu, noodles and sauce into the vegetables and mix well.
